Instructions
- Bake the sweet potatoes. Heat the oven to 400°F (200°C). Scrub the potatoes, prick them a few times with a fork, rub with olive oil and sprinkle with salt. Bake on a lined tray for 45 to 55 minutes, until a knife slides in easily. In a hurry, microwave them for 8 to 10 minutes, turning halfway.
- Cook the proteins. Brown the ground turkey and the ground beef in separate skillets with their seasoning, breaking them up as they cook. Cook ground turkey to 165°F (74°C) and ground beef to 160°F (71°C). Make sure the chicken is cooked to 165°F (74°C) before shredding or dicing it.
- Prep the toppings. Mix the chipotle crema, slice the avocado and jalapeños, and set out the salsas, cheeses and beans.
- Open the boats. Slice each potato lengthwise and gently press the flesh with a fork to make room for the filling.
- Fill and melt. Add the protein, beans and cheese for each flavor. Return the boats to the oven for 5 minutes so the cheese melts.
- Finish with fresh toppings. Add the crema, pico, guacamole, avocado, cilantro or jalapeños, and serve right away.
Meal Prep, Storage and Reheating
- Fridge: store the baked potatoes and the cooked proteins in separate airtight containers for up to 4 days. Keep fresh toppings like avocado, guacamole, crema and pico separate and add them after reheating.
- Reheat: microwave an assembled boat for 2 to 3 minutes, or warm it in a 375°F (190°C) oven for 12 to 15 minutes, until hot all the way through.
- Freezer: wrap filled boats individually and freeze for up to 3 months, without the fresh toppings. Thaw in the fridge overnight before reheating.

Tips for the Best Sweet Potato Taco Boats
- Pick potatoes of similar size so they all bake at the same pace.
- Don’t skip the fork press. A little mashed flesh creates a well that holds the filling.
- Drain and rinse canned beans to keep the boats from getting soggy.
- Go lighter: use Greek yogurt instead of sour cream and go easy on the cheese.
- Make it vegetarian: use extra black beans and a little more cheese in place of the meat.
- Make it dairy free: skip the cheese and lean on guacamole and salsa for creaminess.
